			<content:encoded><![CDATA[<p><img class="alignleft size-thumbnail wp-image-157" style="margin: 5px;" title="Two plates with fish and chips" src="http://www.brightoncharterfishing.co.uk/images/wordpress/uploads/2010/01/Fish-in-Batter-150x150.jpg" alt="Two plates with fish and chips" width="54" height="54" />Battered fish is enjoyed by everyone.  With cod being the target species on our fishing trips at this time of year, its only right that I give you this simple but classic recipe for preparing your own at home.  Once you have your fish filleted this meal can be prepared very quickly.  I can promise you that this traditional dish cannot be beaten when you&#8217; re using freshly caught cod.  The taste is just heavenly.<span id="more-156"></span></p>
<p>You can use any firm fleshed white fish for this reciepe. Cod, Haddock or Pollack all fry up well in batter.</p>

<h2>Fish in Batter</h2>
<p>2lb Fish Fillets (Cod/Pollack etc.)</p>
<p>Oil for Deep-frying</p>
<p>2 tsp. Oil</p>
<p>55g Plain Flour</p>
<p>A Pinch of Salt</p>
<p>1 Egg Yolk</p>
<p>3 Tablespoons of Warm Water</p>
<p>Lemon Wedges to Serve.</p>
<p><br class="spacer_" /></p>
<p>Heat oil until a large breadcrumb sizzles gently.</p>
<p>Mix together the oil, flour salt, egg yolk and water in a bowl.</p>
<p>Dip the fish into the batter and lower into the heated oil.</p>
<p>Increase the temperature of the oil.</p>
<p>Fry for 4-10 minutes depending on the thickness of the fish.</p>
<p>Drain, sprinkle lightly with salt and serve with lemon wedges.</p>
<p>Serve with malt vinegar, lemon, or tartar sauce and a good helping of crispy chunky chips and peas.</p>

<h2>Fish Pie</h2>
<p align="center"><strong> </strong></p>
<p>500g Fresh Fish Fillets (Cod/Pollack etc.) <br />
 6 Medium Potatoes<br />
 1 Leek<br />
 Some Saffron<br />
 1 Tablespoon of Flour<br />
 50g of Butter<br />
 1 pint of Milk<br />
 A saucer of Grated Cheese<br />
 Salt &amp; Pepper to taste</p>
<p><br class="spacer_" /></p>
<p>Peel potatoes and boil in a little salted water.</p>
<p>Heat the milk in pan, sprinkle in the saffron and stir so that it starts to infuse. Keep the milk simmering, add the fish and cook for about fifteen minutes.</p>
<p>Lightly fry the leek in half the butter then add to the fish.</p>
<p>Melt the remaining butter, add the flour and stir to form a roux. Cook gently for several seconds and then add the reserved liquor, slowly, while continuing to stir.</p>
<p>Pour the sauce over the fish, and leeks.</p>
<p>Mash the potato with plenty of butter, spread over the fish, and grate over some cheese.</p>
<p>Cook for thirty five minutes Gas Mark 5.</p>

<h2>Baked to Perfection</h2>
<p>1lb Fish (Cod/Pollack etc.)</p>
<p>55g Butter</p>
<p>2 tsp.  Soy sauce</p>
<p>2 tsp.  Lemon juice</p>
<p>1tsp.   Lime juice</p>
<p>1 Clove garlic (crushed)</p>
<p>½ tsp. Crushed red pepper</p>
<p>Salt &amp; Pepper</p>
<p>Place your fish in a baking dish.  Combine the remaining ingredients and pour over the fish.  Bake in the oven for approx. half an hour at Gas Mark 6.</p>
<p>Baste once or twice during cooking.  Serve with vegetables of your choice.</p>
