Battered fish is enjoyed by everyone. With cod being the target species on our fishing trips at this time of year, its only right that I give you this simple but classic recipe for preparing your own at home. Once you have your fish filleted this meal can be prepared very quickly. I can promise you that this traditional dish cannot be beaten when you’ re using freshly caught cod. The taste is just heavenly.
You can use any firm fleshed white fish for this recipe. Cod, Haddock or Pollack all fry up well in batter.
Fish in Batter
2lb Fish Fillets (Cod/Pollack etc.)
Oil for Deep-frying
2 tsp. Oil
55g Plain Flour
A Pinch of Salt
1 Egg Yolk
3 Tablespoons of Warm Water
Lemon Wedges to Serve.
Heat oil until a large breadcrumb sizzles gently.
Mix together the oil, flour salt, egg yolk and water in a bowl.
Dip the fish into the batter and lower into the heated oil.
Increase the temperature of the oil.
Fry for 4-10 minutes depending on the thickness of the fish.
Drain, sprinkle lightly with salt and serve with lemon wedges.
Serve with malt vinegar, lemon, or tartar sauce and a good helping of crispy chunky chips and peas.

Your batter mix is nice but for chip shop crispy batter try this recipe.
200g plain flour
110mil water
110mil beer (not larger)
1x7g dried yeast
1tsp ot turmeric.
Place flour into a bowl
Mix the water and beer together in a jug making sure that they are tepid, then add the yeast and give it a good whisk and add to the flour.
mix untill it has the texture of double cream, add the Turmeric stir and then cover for 30 min
the yeast will activate and your mix will be all frothy give it a stir.
dip your fish in season flour and into the batter cook at 170c for about 6 minutes,
